Tasty and Easy St. Patrick's Day Recipes

Are you planning to throw a St. Patrick's Day party for your friends? Have the decorations and party favors but not sure what to make? I have picked out three simple and delicious recipes that will leave your mouth watering.

The Beverage

Start the party by offering your guests a warm cup of Irish coffee.

Ingredients:
½ cup of hot coffee
1½ tbsp. Irish Whiskey
1 tsp. sugar
1 tbsp. Whipped Cream

Preparation:

Mix the coffee, whiskey, and sugar together in a cup.

Garnish with whipped cream and serve.

(Serves 1)

The Appetizer

I have found an appetizer that is perfect for St. Patrick's Day. This Chicken and Cabbage Soup recipe is very hearty, but will leave you with more than enough room for the main course.

Ingredients:
4 cups chopped cabbage (½ small head)
1 cup sliced celery
1 cup diced onions
2 cups sliced carrots
8 cups of cubed potatoes
2 cans chicken broth
2 cloves of garlic smashed
2 cans crushed tomatoes, undrained
2 bay leaves
¼ cup chopped parsley
1 tsp. sugar
1 tsp. vinegar
Fresh Thyme
Salt and pepper to taste

Preparation:

Place the chicken broth and vegetables (except Tomatoes) in a large pot and let them simmer for approx. 30 minutes.

Halfway through, add the tomatoes and spices to the soup and continue cooking until the vegetables appear to be tender.

The Entrée

For dinner, consider serving Reuben sandwiches to party-goers. Sandwiches do not usually satisfy a big appetite but trust me, this one does!

Ingredients:
8 slices Rye bread
8 slices Swiss cheese
1 cup Sauerkraut, drained
¾ lb. corned beef, sliced
½ cup Thousand Island dressing
2 tbsp. butter

Preparation:

Preheat a large skillet or griddle. (Medium Heat)

Cover 4 bread slices with cheese, corned beef, sauerkraut, and dressing.

Top each with a second bread slice and spread butter on both sides of each sandwich.

Grill sandwiches on both sides, until golden brown. Serve hot.

(Serves 4)

The Dessert

Dessert has always been my favorite part of a good meal, so treat your guests to a sweet and authentic Irish treat this St. Patrick's Day. These Soda Bread cookies are fast and very yummy.

Ingredients:
2 cups all-purpose flour
¾ cup sugar
¼ tsp. salt
½ tsp. baking soda
½ cup butter
¼ cup buttermilk
1 egg
½ cup currants
1 tsp. caraway seed

Preparation:

Preheat oven to 350 degrees

Combine dry ingredients in a large mixing bowl.

Use two knives to cut in butter to until mixture resembles coarse meal.

Stir in currants, mix in beaten egg, pour in milk, and mix with a fork to make the dough soft.

Shape the dough (on a floured surface) into a ball and knead lightly, 5 or 6 times.

Roll out dough to ¼ inch thick and cut into squares, circles, or triangles with a knife.

Bake for 12-15 minutes, or until slightly browned.

(Serving Size: 3 Dozen)

Each recipe will make a great addition to any St. Patrick's Day party. They are easy to make, serve, and will please appetites and tastes of all kinds.
