Pumpkins are not only good for carving. You know all those 'guts' you pull out when you clean the pumpkin prior to carving it? Well, if you clean all the seeds out of there you can bake them and eat them. They are not only yummy but they are full of fiber and protein too.
How to Roast Pumpkin Seeds
After cleaning the pumpkin seeds from the rest of the pumpkin pulp and strings, rinse them under cold water. (It is easier to do this immediately before the pulp has dried.)
Pre-heat oven to 325 degrees F. Spray a baking sheet with Pam (or oil/non-stick cooking spray of choice) and place pumpkin seeds on the pan in a single layer. Sprinkle with salt and bake until toasted, approximately 25 minutes. Be sure to check and stir seeds every 10 minutes or so.
Let cool and store in an air-tight container.
This is a basic recipe. You can always experiment with seasonings and oils to find your favorite flavor! I have included some of mine below. Enjoy!
Maryland Pumpkin Seeds
Substitute 1/4 cup seafood seasoning, such as Old Bay™ for the salt.
Spiced Pumpkin Seeds
Along with 1/4teaspoon salt, add 1/8 teaspoon garlic salt and 2 teaspoons Worcestershire sauce.
Pumpkin Seeds with Sugar and Spice
Along with 1/4 teaspoon salt add 6 tablespoons white sugar and 1/2 teaspoon pumpkin pie spice.
Cajun Pumpkin Seeds
Substitute 1/4 cup Cajun seasoning for the salt.
Mexican Pumpkin Seeds
Substitute 1/4 Mexican chili lime seasoning for the salt.
Healthy Pumpkin Seeds
Instead of salt try 1/4 cup salt-free season blend such as Mrs. Dash.
Italian Pumpkin Seeds
Substitute 1/4 cup Italian seasoning for the salt.
Greek Pumpkin Seeds
Instead of salt substitute 1/4 Lemon Pepper seasoning blend.
Buffalo Style Pumpkin Seeds
Along with 2 teaspoons butter or margarine, add Tabasco (or other hot sauce) to taste and 1/8 cup of salt.
