Healthy Holiday Party Foods

Beverage:
Cranberry & Apple Green Tea (serves 4-8)
8 cups water
one quarter cup fresh green tea leaves
one half cup cranberries, halved
1 apple, peeled/cored/sliced
water

Bring water to boil, add green tea leaves. Steep for about 5 minutes. Pour into large soup tureen. Place cranberries and apple into tea mixture. Cover. Ladle into cups when ready to enjoy! Add some spearmint leaves for extra zest and color! Lemon slices are great too!

Fruit Spread:
Good Ole Fashioned Applesauce
4 apples, peeled/cored/sliced
1 cup apple juice, frozen concentrate
water
2 teaspoons cinnamon
one half teaspoon nutmeg

Place apples into medium saucepan. Cover with water. Add apple juice. Cook over medium heat until tender. Remove from heat and add in spices. Mash apples with fork until desired consistency is reached. Great as side dish, on crackers, bread, etc. Store leftovers in airtight container in fridge.

Appetizer:
Gingerly Broccoli (serves 8)
2-3 stalks broccoli, peeled and sliced
one quarter cup apple cider vinegar
2 whole garlic cloves, minced
1 tablespoon ginger root, freshly grated
2 tablespoons light miso, melted into 2 tablespoons hot water
1 tablespoon honey or fruit sweetener
3 tablespoons extra virgin olive oil
3 tablespoons apple juice, frozen concentrate

Steam broccoli for 5-7 minutes, til tender. In separate saucepan, combine remaining ingredients. If using miso, dissolve in 2 tablespoons hot water. Bring sauce to boil, reduce heat to simmer. Cool. Pour into small serving bowl. Place sauce bowl in center of serving platter. Surround with broccoli. Serve with toothpicks. Dip broccoli into sauce.

Herbed Pumpkin Seeds (serves ?)
Seeds of one pumpkin, rinsed
Oil or veggie broth
Combination of fresh herbs (rosemary, thyme, garlic, oregano)
Salt, if needed

Place seeds into mixing bowl. Lightly spritz, or coat, with either oil or broth. Add herbs and mix to coat seeds. Place onto lightly greased (spritz lightly) baking sheet, single layer. Bake in 350 oven for about 10 minutes, til lightly browned. Cool prior to serving. Store in airtight container. These make a great holiday gift, also!!
