Tasty. Nutritious, and Healthy Meal Ideas: Great for Brunch or the Main Course

Enjoy Turkey Leftovers and Pumpkin in a New Way!

Relish:
Cranberry Apple Relish (serves 4)
1 cup cranberries, cut into half
1 whole orange, seeds removed, peeled and cubed
1 whole pear, peeled/cored/cubed
one quarter cup orange juice, freshly squeezed
2 whole apples, peeled/cored/cubed
2 tablespoons apple juice, frozen concentrate
Water

Place fruit and juices in small saucepan. Add water until cranberries are covered. Cook over medium heat. Bring to boil, reduce heat and cook til cranberries 'burst.' Stir frequently. Mash cranberries with fork. Adjust sweetener/liquid as needed. Store leftovers in airtight container in fridge.

Salad:
Mixed Greens Menagerie (serves 8-10)
1 bunch red leaf lettuce, rinsed and torn apart
3 cups Asian greens, rinsed and torn apart
1 bunch green leaf lettuce
1 cup alfalfa sprouts
3 tablespoons slivered almonds
1 apple, peeled/cored/diced
3 roma tomatoes, cubed
1 cucumber, peeled and cubed
3 tablespoons feta cheese, if desired

Combine all ingredients into large salad bowl. Toss gently. Serve with your favorite vinaigrette.

Side Dish:
Pumpkin Extravaganza (serves 8)
1 small pumpkin, cubed, peeled and deseeded (roast seeds as above)
1 medium onion, diced
1 medium apple, peeled/cored/cubed
1 medium pear, peeled/cored/cubed
one quarter cup cranberries, cut into half
one quarter cup parsley, freshly chopped
one quarter cup veggie broth
one teaspoon each thyme and rosemary, chopped
3 tablespoons basil, freshly chopped
1 garlic clove, minced

Mix all ingredients together in large bowl. Place into lightly oiled (or brothed) casserole dish. Bake at 350 for approximately 45 minutes, til pumpkin is tender.

Main Dish or Brunch:
Turkey Spinach Omelettes (makes 4)
8 whole eggs, beaten
1 medium avocado, peeled and chopped
1 cup spinach, rinsed and chopped
1 cup turkey, diced
one half cup onion, chopped
3 tablespoons veggie broth
1 medium tomato, chopped
1 garlic clove, minced
2 teaspoons parsley, chopped
2 tablespoons basil, freshly chopped
cheese, if desired

Place broth into skillet over medium heat. Add veggies and cook til lightly browned. When done, place into small bowl. Set aside. Mix eggs together with herbs in separate small bowl. Pour into skillet. Cook over medium heat until it starts to 'bubble.' Flip over to cook other side. Place veggie mixture into center in a 1" strip. Sprinkle with cheese, if desired. Fold over egg to form one half circle. Slide onto serving plate and enjoy!

Dessert:
Apple Cheese Pie (serves 8)
4 whole apples, peeled/cored/sliced
3 bunches spinach leaves (about 5-6 cups), rinsed and chopped
3 whole eggs
1 cup ricotta cheese, part skim milk
1 cup milk (dairy or soy)
one quarter cup apple juice, frozen concentrate
3 tablespooons Neufchatel cheese
one half teaspoon cinnamon

Crust:
3 cups bread crumbs
3 tablespoons apple juice, frozen concentrate

Preheat oven to 350. Steam apples and spinach til tender. Cool. Set aside. Combine bread crumbs and juice in bowl. Lightly grease 9" pie pan and press bread mixture onto bottom and sides. In large bowl, mix together eggs, cheese, milk, one quarter cup juice concentrate and cinnamon. Add spinach and apples.

Pour into pie pan. Bake in 350 oven for about 50 minutes, until knife comes out clean when poked into center.
