Tasty Spinach

Use Fresh or Frozen Spinach for This Great Vegetable Side Dish

TASTY SPINACH

INGREDIENTS:

6 STRIPS BACON (turkey bacon is fine)

1 CUP CHOPPED ONIONS

1 LARGE BAG FRESH SPINACH, OR 2 BAGS CHOPPED FROZEN SPINACH

2 CLOVES GARLIC, MINCED

1/4 CUP OLIVE OIL

SALT AND PEPPER TO TASTE

1 CUP GRATED PARMESAN CHEESE

Cook bacon in in large skillet until crisp. Remove from pan to cool, drain most of the bacon grease. Crumble the bacon when cool enough to handle.

Add onions and garlic to skillet and cook over low heat until tender. Add small amount of olive oil if necessary to prevent scorching. Stir in spinach and drizzle with olive oil. Cover with lid, and heat until spinach is soft. Add salt and pepper, and crumbled bacon.

Transfer to serving bowl and sprinkle Parmesan cheese over all.

    I'll have to try this, spinach is one of my favorite foods. I also like doing plain spinach with Italian dressing.

    We think alike! Sometimes I use a little butter and half-and half instead of the "healthier" olive oil. Mozzarella instead of Parmesan...

    Remember creamed spinach? Yum! You could add a splash of cream or milk to this to make that old-fashioned dish a savory newcomer.
