Tasty Ten Minute Bruschetta

Ingredients

2 Large ripe tomatoes

4 or 5 Fresh sweet basil leaves

1 tbsp Cut chives OR 1/4 Large red onion

1/4 tsp Garlic powder

Dash Sea salt

1 1/2-2 tsp Extra virgin olive oil

1 packet Melba toast OR 1-2 Large pieces of sourdough bread

Grated parmesan cheese

Directions

Halve tomatoes and remove seeds. Dice halves into small cubes and place in a serving bowl. Cut chives with a pair of kitchen scissors or chop red onion and place either one atop the tomatoes. Next, cut basil with scissors and drop it in the bowl with the rest of the ingredients. Add garlic powder and sea salt, and drizzle with olive oil. Mix the ingredients with a wooden spoon. For bread, you may use Melba toast, but I like to toast a piece of sourdough bread and cut it into small triangles or squares. Place the serving bowl with the bruschetta mixture in the center of the plate, and place the toasted squares decoratively around the bowl. In a separate bowl, place grated parmesan cheese. It may be fresh or store-bought, (whichever you prefer). Place a spoon in the bruschetta bowl and enjoy!

Servings: 2-3 people.
