Tasty Tomato Potato Soup

Tomato Tomatoe, Potato Potatoe- Either Way it Tastes Good!

As the weather starts to get colder, I decided to share one of my personal recipes with you that is sure to please. I love cooking, and sometimes I do not have time to prepare a completely home-cooked meal. This recipe is easy to prepare, and also very inexpensive.

Too Too Easy Tasty Tomato Potato Soup

(Serves 4)
Prep Time: 5 minutes
Cooking Time: 10 minutes

Ingredients

1 26 oz. can of Condensed Tomato Soup
4 Servings of Instant Mashed Potatoes, prepared thick and per package instructions
1 tsp. Garlic Powder
1/2 cup Shredded Cheddar Cheese
Salt & Pepper to taste
Chives for garnish (optional)

In a medium saucepan, combine 1 can of tomato soup and 1 can of water. Add garlic powder, salt and pepper and simmer over medium heat for 10 minutes. Pour your tomato soup into serving bowls. Using an ice cream scoop (for shape), place 2 scoops of mashed potatoes in the center of each bowl. Sprinkle cheddar cheese on top, and add chives for garnish if you wish. Enjoy!

For a more home-cooked feel, I sometimes add whole potatoes. You can take 3 or 4 medium sized potatoes and wash and peel them. Cut them into bite size portions and boil for 10-15 minutes or until tender. Drain the potatoes and add them to your previously prepared instant mashed potatoes. It gives the instant mashed potatoes a chunkier texture, making your guests think it's all from scratch!

To make a "meatier" soup, you can also add 1 can of mixed vegetables to the recipe. Extend the cooking time 10 more minutes to soften the vegetables.

This recipe can easily be increased for larger portions, or to feed more people. Simply double, or triple your ingredients as necessary. I typically pair my tomato potato soup with my home-made tasting cheese bread!
