Tasty Zucchini Recipe - Zucchini, Zucchini, Zucchini

When you plant one zucchini plant you get a lot of zucchinis. I was always looking for ideas to prepare them. You can steam, fry, bake, etc. I have heard there is even an apple pie recipe I must find and try. Heard it is delicious.

One friend gave me a casserole recipe which I have added a couple of my own ingredients. It's delicious. Give it a try. It's great for dinner or picnics.

6 cups of cut up zucchini
1/4 cup onions, chopped
1 cup of shredded carrots.

1 can cream of chicken soup (you can also try cream of mushroom or celery)
1 cup of sour cream

1 8oz. pkg. of Stove Top Stuffing (chicken flavor is best)
1/2 butter - melted

Italian bread crumbs and shredded cheese (you favorite kind)

In a sauce pan combine your zucchini, onions and carrots. Season to taste. Cover with water and boil for 5 minutes. Then drain.

Combine your soup and sour cream. I find heating this helps to blend it. Add this mixture to your drained vegetables.

Combine stuffing mix and butter. Spread into a baking dish or pan sprayed with Pam. I prefer the baking dish.

Spoon your mixture on top of the stuffing. Some save some of the stuffing for the top, I lightly cover with Italian bread crumbs.

Bake at 350 degrees for 25 - 30 minutes. About five minutes before I remove the casserole from the oven I cover it with shredded cheese, any flavor.

Remove from the oven and let stand for about 5 minutes.
