Nana's "Tin Plate" Cake

Ingredients

1 Cup of Self Raising Flour

Pinch of salt

1 1/4 cup of white granulated sugar

1 cup of soaked currants in boiled water then drained

1/2 block of butter ( About 4 oz)
cut into small pieces

2 eggs beaten

(no milk used)

Method

Sieve together by hand in a large bowl flour, salt, cup of sugar

Work in butter making a doughy mixture

Form a well in centre, add beaten eggs and currants

Mix them through doughy mixture with large spoon

Grease a flat tin cooking plate (about 8 inches diameter)

Spread out mixture evenly over plate

Cook at low oven 140 degrees for 30-45 mins until golden

Sprinkle with a little sugar straight out of oven

Eat hot or cold in wee slices or large : serves about six-eight people
