Tequila Lime Pork Roast

This is a delicious pork roast marinated in tequila and covered with a tasty rub. It served 10 people.

Ingredients:

3 lbs boneless pork loin

1 cup tequila

2 cups lime juice

½ cup olive oil

3 garlic cloves, peeled and crushed

1/8 teaspoon salt

1 tablespoon lime zest

1 tablespoon diced oregano

1 tablespoon ground black pepper

1 tablespoon brown sugar

1 teaspoon dried thyme

½ teaspoon kosher salt

1/8 teaspoon ground allspice

Place pork in a large zip-type plastic bag.

Combine tequila, lime juice, oil, garlic and 1/8 teaspoon salt and pour over the pork. Seal the bag and refrigerate for 24-48 hours.

Remove pork from bag and discard marinade. Pat the pork dry.

Heat oven to 350 degrees.

Mix remaining ingredients in a bowl, and pat the mixture over the surface of the pork (top, bottom and sides).

Place the pork on a rack in a shallow roasting pan. Roast 1 to 1 ½ hours, or until the internal temperature reaches 150 degrees.

Remove from the oven and let the pork rest 10 minutes (the internal temperature will increase to 160 degrees.)

Slice and serve.
