Tex Mex Guacamole

  • 6 avocados
  • 1 teaspoon salt
  • 3/4 cup diced onion
  • 4 tablespoons chopped fresh cilantro
  • 3 Roma tomatoes, diced
  • 1/4 cup diced green peppers
  • 1 teaspoon garlic powder
  • pinch of cayenne pepper
  • 2 teaspoons of chipotle taco seasoning
  • 1/2 teaspoon liquid smoke
  • 1 lime
Preheat an outdoor grill and lightly oil grate.

Grill avocados until just slightly brown and caramelized. Cool to room temperature, peel, pit, and mash.

Mix together seasonings, liquid smoke, and avocados. Stir in onions, green pepper, and cilantro. Add tomatoes, being careful to avoid adding too much of the liquid centers (makes for a runny guacamole!). Squeeze lime juice over guacamole and stir. Adjust seasonings to taste. For extra heat, add some of the seeds from the bell pepper! Chill for one hour before serving.
