Ingredients:

2 Cups uncooked white rice

1 stick butter or margarine

1 Medium yellow onion finely diced

1/2 Cup fresh parsley finely diced

4 Cups chicken stock

1/2 Cup low sodium soy sauce

1 tsp cayenne red pepper

2 tbsp paprika

1/2 tsp salt

1/2 tsp black pepper

2 tsp garlic powder

Directions:

Saute the butter, rice, onion and parsley in a large pot on medium high heat for 5-8 minutes or until rice is brown and onions are translucent.

Add the rest of the ingredients and stir to incorporate. Cook over medium heat for 15 minutes or until rice is cooked and liquid is absorbed.

Tips:

Do not take your eyes off the rice while sauteing, as the rice can easily burn. Be sure to stir the rice frequently during the sauteing and cooking.

The cayenne pepper can be adjusted up or down according to your own taste.

Remove the pot of rice from the heat as soon as most of the liquid is absorbed to avoid over cooking the rice.
