Thanksgiving Brunch Dessert & Drink Recipes

I always like to offer my guests an alternative to the traditional Thanksgiving desserts of pumpkin and mincemeat pies, so this year, I've come up with another dessert that combines the traditional Thanksgiving cranberries with those crispy apples of the autumn season and we have a Cranberry Apple Crisp to add to the Thanksgiving Brunch dessert table. This also makes a very good dessert that's easy to take with you if you're invited out for Thanksgiving Day brunch.

Cranberry Apple Crisp:

5 medium crisp apples, unpeeled & chopped
1 lb. whole cranberries
2 cups rolled oats
2 cups white sugar
1 cup packed brown sugar
1/3 cup flour
1/2 cup chopped pecans
1tsp. cinnamon
1 tsp. nutmeg(optional)
3/4 cup melted butter

Layer apples and cranberries in greased 9x13 inch baking dish. Sprinkle with mixture of oats and white sugar. Combine remaining ingredients together in a bowl and mix well. Spread evenly over the top. Bake at 350 degrees for approximately 1 hour or until fruit is tender and the crisp is a golden brown. Serve with your favorite whipped topping.

Cranberry Cider Sparkler:

Mix 1 qt. each chilled apple cider and cranberry juice cocktail in a large punch bowl. Add 2 cups lemon-lime flavored sparkling water. Float fresh cranberries on top. This simple to make punch can be served right beside your favorite wines or other cocktails to guests who prefer a non-alcoholic beverage. It's also a great drink for the kids.
