Thanksgiving Day Pumpkin Soup

The flavor of pumpkin tends to be a little bland, so the way that you prepare your Thanksgiving Day Pumpkin Soup, will be what adds excitement to the flavor of your soup.

We always seem to have plenty of left-over turkey from our Thanksgiving Day meal. This soup goes excellently with left-over turkey. Or, if you have an early Thanksgiving meal, the soup is great to be served in the evening.

Thanksgiving Day Pumpkin Soup

Place 3 cups of mashed pumpkin in a bowl. Whisk in 3 cups of scalded milk. (It really isn't necessary to scald your milk, but it does add a richness to the flavor.) Add 1 tablespoon of butter or margarine. After this is whisked together add 2 tablespoons of brown sugar, a pinch of salt and and a dash of nutmeg and cinnamon. Heat this all together and serve at once. After I put this into bowls, I like to place a sprig of parsley on top before I serve it.

This is quite a tasty soup. I think you'll really like it.
