Thanksgiving Lunch: Easy Homemade Cream of Broccoli Soup

HOMEMADE CREAM OF BROCCOLI SOUP

Ingredients:

1 can chicken broth
2 small boxes frozen chopped broccoli
1 c. evaporated milk (NOT sweetened condensed!)
1 can cream of mushroom soup
1/2 c. minced onion
freshly ground black pepper to taste
salt to taste

Instructions:

Heat cream of mushroom soup and set aside.
Heat the chicken broth to a boil. Add frozen broccoli. Simmer covered for 15 minutes.
Add evaporated milk and mushroom soup.
Stir in minced onion, salt and pepper.
Warm for 5 minutes but do not boil.

Serving Suggestions:

Serve immediately with a fresh baguette or, if you're really adventurous, your own homemade bruschetta..
Garnish with croutons or a dollop of sour cream and a sprig of mint.

Notes:

You can make this soup as homemade as you desire by making your own chicken broth, substituting freshly chopped broccoli, making your own cream of mushroom soup, etc. Make it unique by trying these different spices: garlic, crushed red pepper, basil or oregano. Other variations could include additional ingredients like turkey, grated cheese or diced potatoes. But if you want to serve homemade flavor and comfort fast, the easy version is delicious.

    This is a super recipe. I have made a broccoli soup from an old Gourmet recipe but it takes so long to make and requires a lot of work. This might be a great alternative.
