Thanksgiving Recipes I

Turkey Loaf

1 pound ground turkey
1/2 c. parsley (chopped)
1 sm. onion (diced fine)
1 Large carrot (grated)
1 c. stuffing cubes (herb and seasoned)
2 stalks celery (diced fine)
1 egg (beaten slightly)
1/4 tsp. pepper
1/4 tsp. salt

Mix all ingredients together, mix well. Put in a foil lined loaf pan. Bake at 350 degrees for 40 to 50 minutes. Until the center is firm to the touch.

Sweet Potato Casserole

8 med. sweet potatoes
1 c. brown sugar (packed)
1 tsp. orange rind (grated)
1/2 c. orange juice
1 Tbsp. honey
1/4 c. butter

Peel sweet potatoes, cut in half. Brown butter in fry pan. Put sweet potatoes and butter in casserole dish, Mix the honey brown sugar, orange rind and orange juice, then pour over sweet potatoes and mix well. Bake at 450 degrees for 45 minutes, then remove the cover and bake until sweet potatoes are tender.

Fruit Salad

1 can fruit cocktail
1 oranges (peeled and cut up)
1 sm. bag mini marshmallows
4 apples (peeled and diced)
1 bunch of bananas (sliced) about a medium size bunch of bananas
1 1/2 c. nuts (your choice), we liked chopped pecans (optional)

Mix all together and refrigerate.

Cranberry Salad

1 pkg cranberries (1 pound)
6 pkgs raspberry jello (small pkgs)
4 apples
1 oranges

Grind cranberries, apples and oranges (don not peel apples and oranges), only grind until it is a course texture.

Make the jello (follow directions on pkg) and add 1/2 c. sugar to the jello. Let set partially, then add the ground up ingredients. Put in the refrigerator to set up.

Deluxe Green Beans

2 pkg frozen green beans (10 oz. pkgs)
1 c. onion (minced)
1 c. sour cream
1/4 c. breaded crumbs (fine crumbs)
1/4 c plus 1 Tbsp. butter or margarine
1/4 tsp. Dijon mustard
2 Tbsp. flour
1/8 tsp. pepper
1 tsp. salt
1/2 c. Swiss cheese (shredded)

Cook and drain beans.

Melt 1 Tbsp. margarine in a kettle and set aside. Then melt 1/4 c. margarine, add onion and saute until tender and crisp. Then add flour, mustard, salt and pepper. Cook until thickened, stir continuously. Once thickened r emove from heat and stir in cheese, beans and sour cream, mix well. Put in casserole dish. Mix bread crumbs and 1 Tbsp. melted margarine. Sprinkle over the beans. Bake at 350 degrees for 20 to 25 minutes until crumbs are golden brown.
