Thanksgiving Tips for People with Diabetes - We all know that the best part of thanksgiving is the sweet tooth table. For those who have diabetes this can be a challenge, so lets take the challenge out of this all together. About twelve years ago my friend kay was near death at 420 Ibs and so near bed ridden it was very hard for her to get around , one night she called for an ambulance she was not feeling right she felt very strange her vision was blurring , she could not focus well. This trip to the hospital was the one that would change her life for good, we were hoping anyway.

I went ahead and moved in with her at her home she didn't have family here and her mother lived very far away she didn't speak much of her mother. Anyway kay is at this time 42 yrs.old. after a week in the hospital she comes home under strict orders and a visiting nurse comes everyday. Well the one thing that was at the top of kay's list was to eat sweets , pie, cake, cookies, I started researching through cook books and looking for ideas, one day I ran across a cook book by Oprah , it was a low fat cook book, so from that and this sugar sub. Called splenda and my own creations mixed in, For diabetics it is the hardest to give up taste, that is so important and low sodium is very important.

Learning to cook another way is all it takes, it is not any harder than the other just different, but I guarantee you will have the taste all the flavor, Splenda measures like sugar so if your recipe called for half a cup of sugar, that is what you pour. For your gravy for the turkey , make your gravy with 2% milk or water and use cornstarch instead of flour for the flavor mix 2 Tbls of turkey broth right off the turkey. If you use salt you need to use a salt sub. But the broth should give it that lift, after the onions, and boiled eggs that are in your gravy the turkey broth brings all the flavors to life.

I can remember the first thanksgiving day had , of course I fixed everything for her, she had turkey and dressing with a low fat gravy the one above, fruit salad, made with sugar free cool whip, today's sugar subs. Are so much better than a long time ago things taste just like they were made with sugar. Pumpkin pie 2% milk Splenda egg whites no yolks and your pumpkin pie seasoning, nutmeg, cinnamon, a dash of ground cloves. Fruit pies made with fresh fruit splenda pie crust made with veg. oil no lard, no shortening, 100% veg.oil or canola oil will work just enough to work your dough 2 cups flour about a quarter cup oil and very cold water to make your crust form, throw a pinch of splenda brown sugar and your there.

My friend in one year made it down to 200Ibs, I am so proud of her, and I feel so good about taking the time to learn about this disease, because this is such an important part of our lives, so you don't let people tempt. You and just stay strong and keep faith and enjoy your new menu.

Splenda, no sodium, salt sub. 2% milk low fat and sugar free everything, just make sure its splenda sugar sub.
