2 teaspoons baking powder

dash salt
3/4 cup orange juice
1/2 cup chopped walnuts
3/4 cup cranberries
to taste grated orange peel
1/3 cup vegetable oil
2 eggs

Preheat your oven to 350 degrees. Grease the bottom and sides of a loaf pan with butter or lightly spray with cooking oil. Sprinkle all purpose flour over the butter/oil. Turn the loaf pan upside down and gently tap with your hand, removing any excess flour.2
Mix the flour, oats, sugar, baking powder, baking soda, and salt in a large bowl. In a second bowl, combine the eggs, vegetable oil, orange juice, and orange peel. Add the dry ingredients to the wet ingredients, one cup at a time until well combined.3
