Get the Turkey ready to go
Remove the giblets and neck from inside the turkey. You can either get rid of these parts or save them if you have a recipe for using them in. Make sure the turkey is completely thawed. You may need to have the turkey defrost in the refrigerator for several days, so make sure you get your turkey at least a week before Thanksgiving. Rinse and dry the turkey inside as well as outside. Twist the wings behind the neck and fold the legs underneath the wings. Brush vegetable oil all over the turkey to help keep the skin moist and juicy.
Get the Grill ready to go
Charcoal Grills: If you are using charcoal, you should place the charcoal on the sides of the grill and not in the middle. If you have charcoal in the middle of the grill, chances are the turkey will burn since it will be cooking for some time. Keeping the charcoal on the sides will give enogh heat for cooking without scorching the turkey.
Make sure the charcoal gets very hot before putting the turkey on the grill. Charcoal will look white and ashy when it is at the right heat.
Gas Grill: Just use the burners on one side of the grill. Let the grill heat for about 15 minutes before putting the turkey on. Rotate the turkey once or twice during the cooking time so it will cook evenly. Have a spray bottle handy for flare-ups that might occur if juice drips down. To catch the juice, try placing a drip pan underneath the turkey.
Cooking Time
It will take a few hours to completely barbeque a turkey. Use a meat thermometer to check the temperature of the turkey. The temperature should be 170 degrees for the turkey to be ready to eat. When you use the thermometer, carefully insert it into the breast part of the turkey, making sure to not touch bone. The bone will be hotter than the meat and you could get the wrong temperature reading.
After taking the turkey off the grill, remember to let it sit for a little bit before carving it.
