Thanksgiving Turkey Leftover Meal Recipe Ideas

A Few Things to Try with that Leftover Bird

I love Thanksgiving and turkey but if I make a big bird, I'm always looking for ways to make leftover turkey meals seem interesting. Over the years, I've acquired a few good ones. Give them a try.

Turkey Stuffing Loaf

2 tablespoons butter

3 tablespoons chopped onion

1 small celery stalk diced

1 cup gravy

3 cups chopped turkey

1 ½ cup bread crumbs

2 eggs

2 tablespoon parsley

1 tablespoon poultry seasoning

1 teaspoon garlic

Dash of salt

Dash of pepper

In a pan melt butter and add onions, celery and gravy.

Once hot, in a large bowl combine mixture with the remaining ingredients. Put into loaf pan and cook for about 30 minutes at 350 degrees. You can always serve the other leftover vegetables on the side.

Turkey Leftover Pot Pie

2 cups of gravy or whatever you have leftover

Leftover vegetables (mashed potatoes, turnips, corn or anything you want to throw in)

3 cups of cut up turkey

½ a medium onion chopped

Salt and pepper to taste

2 frozen pie shells

Put one frozen pie shell on bottom of round pan. Put turkey on top of pie shell. Mix the remainder of ingredients well and put on top of turkey. Cover with second pie shell. Cook 35-45 minutes until shell is brown.

Turkey Noodle Soup

4 quarts of water

Leftover gravy

Turkey carcass

4 celery stalks diced

1 medium onion diced

1 cup of carrots diced (great if you have leftover)

4 potatoes diced

3 cups of turkey

Leftover veggies

Salt and pepper to taste

3 tablespoons flour

Cook the carcass, the water and gravy until boiling and then simmer for one hour. Remove carcass and take off remaining meat. Add remaining turkey and all other ingredients to the soup. Cook about 40 minutes. Mix flour in ½ cup of water and stir in soup. Simmer for about 10 minutes and serve.

Turkey Divan

1 bunch broccoli florets

4 tablespoons butter

¼ cup flour

2 cups milk

2 teaspoons Dijon mustard

3 cups turkey

1/2 cup grated cheddar cheese

Leftover stuffing (if you have any)

Salt and pepper to taste

Boil broccoli. In saucepan melt butter and add flour. Whisk in milk and simmer a few minutes. Remove from heat and add mustard and salt and pepper.

Butter a baking dish and put turkey as first layer. Then add a layer of stuffing, if you wish. Next, add sauce mixture and then broccoli. Sprinkle on cheese. I put lots but put on as much as you like. Cook about 20 minutes at 400 degrees Fahrenheit or until cheese looks slightly melted and brown. Let cool and serve. This is probably my favorite leftover dish.

Turkey Pancakes

1 cup chopped turkey

1 large potato, diced

1 cup gravy

¼ cup flour

1 small onion, diced

1 green bell pepper, diced

1 egg

Salt and pepper to taste

3 tablespoons vegetable oil

In a bowl combine all the ingredients except the oil. Heat the oil in a saucepan. Spoon half a cup of mixture in saucepan. Cook on each side about 3 minutes and serve. I tend to eat these for lunch or brunch.
