I Dare You Not to Love This Carrot Cake!

My mom's Carrot Cake recipe makes the best carrot cake you'll ever eat! I know, I know, you all think your mom's Carrot Cake is the best. I guarantee you will think differently if you try MY mom's Carrot Cake recipe!

I've searched the web and not found this recipe anywhere. The delicious boiled frosting gives my mom's Carrot Cake a different taste than other carrot cake recipes. All of them use different types of cream cheese frostings.

My family enjoys this Carrot Cake for birthdays and other special occasions. It is a family favorite, especially at Easter. When anyone in the family bakes this Carrot Cake there are smiles all around!

This Carrot Cake does take some time to prepare and bake but it is worth every minute of your time. The recipe makes a large, moist cake with a lot of texture and tastes. I dare anyone, I double dare anyone, to not love this Carrot Cake!

Carrot Cake Recipe

3 cups flour

2 cups sugar

2 teaspoons soda

1 teaspoon cinnamon

2 teaspoon vanilla

2 cups grated carrots

1½ cups vegetable oil

3 eggs

1½ cups chopped nuts - walnuts or pecans

1 small can crushed pineapple with 1½ cups of the pineapple juice added

Mix all of the dry ingredients together.
Add the vanilla, carrots, oil, pineapple, pineapple juice, eggs and nuts.
Mix well.

Oil and flour a 9 x 13" or Bundt pan.

Put carrot cake mixture into prepared pan. Bake in 350° oven for 1 hour.

White Frosting Recipe

Boil until thick over medium heat, stirring constantly:
1 cup milk and 4 tablespoons flour.
Cool milk and flour mixture.

Blend together: 1 cup sugar
1 cup shortening
2 teaspoons vanilla

Add cooled milk mixture a little at a time and beat until smooth and ready to spread.

    I miss carrot cake - almost impossible to find a good one in Thailand. But, like most Thai homes, I don't have an oven so can't try your mom's recipe :( Sounds delicious though!
