The Best Chocolate Cake You'll Ever Have

This chocolate cake recipe was originally given to me by my mother-in-law's friend. I've never seen it in a recipe book. I've made it at least a hundred times, and it is always delicious. It is very simple to make, as well as simple-looking, but it can be "prettied" up a bit with a little creativity. I promise that once you taste this cake, you will not care what it looks like.

Preheat an oven to 350.

In a large bowl, using an electric mixer, combine the following ingredients: 1 box yellow cake mix, 1 box instant chocolate pudding mix, 1 cup water, 3 eggs, and 1/2 cup vegetable oil. Blend until smooth (it only takes a minute or two).

Spray the inside of a bundt pan with non-stick spray, and then coat the bundt pan with flour. Sprinkle chocolate chips around the bottom of the pan (about 3/4 cup of chocolate chips). Pour the batter on top of the chips and place in oven. Bake for 50 minutes.

While the cake is baking, combine on the stove top in a small sauce pan the following: 1 stick butter, 1 cup sugar, and liquor of your choice (I usually use rum, Kahlua, or Bailey's). Stir occasionally to make sure the sugar is dissolved and keep on low heat until all ingredients are combined and smooth.

When the cake comes out of the oven, DO NOT take it out of the pan. Instead, pour the liquor mixture onto the cake (what will eventually be the underside of the cake), doing it slowly to try to avoid spilling it over the sides or in the hole in the middle of the pan. Let the cake sit in the pan for 30 minutes.

Place a plate on top of the cake and turn it over. You may have to hit the pan a little to get the cake out, but since it is so moist, it should come out fairly easily. At this point, you will see that it's not the most beautiful cake in the world, but I usually sprinkle a little bit of confectioner's sugar over the top and stick a few fresh mint leaves in the center. Warning: husbands may sneak into the kitchen and eat the top off of the cake (where the melted chocolate chips are) so hide it if you want to keep it intact!
