The Best Cold Cheese Sandwich Recipe

If you love cheese as much as I do, why not try a cold cheese sandwich? Sometimes, I crave these sandwiches (which make a good vegetarian sandwich for the non-meat eaters). I add lots of veggies, which increases the actual healthiness of the meal. This is a good change from the standard grilled cheese, especially in the summertime.

You don't have to be a vegetarian to like this cheese sandwich, but you do have to like cheese!

These are the ingredients I use, but the sandwich can be easily customizable with any substitution of cheeses, toppings, and dressings. I don't use the little Kraft singles for this kind of sandwich. It's best to use some real cheese slices and save the overly processed cheese for the grilled cheese variety.

Ingredients for 1 serving (1 sandwich)

1 whole wheat sandwich bun

2 slices of Swiss cheese

2 slices of cheddar cheese

Add as much as you like of the following ingredients:

Lettuce (either shredded iceberg lettuce or romaine hearts)

Tomato slices

Hamburger dill pickle slices

Hot cherry pepper slices

Green pepper slices

Cucumber slices

Black pepper

Salt

Red wine vinegar

Yellow mustard, dill spread, or other dressing

Dried dill weed

Directions

The process for making any sandwich should be fairly self-explanatory, but here goes:

1. Slice the sandwich bun into two halves.

2. Place the cheese slices evenly across one side of the bread.

3. Add toppings as desired.

4. Smash the sandwich down so it is flat enough to actually take a bite (with all that stuff, it gets pretty big).

5. Enjoy your sandwich.

6. Repeat as needed.

I got hooked on a similar sandwich when I was in college. I worked at one of the local Sub City stores (like Subway, but way better). If you are ever in Cedar Falls or Waterloo, Iowa, you should definitely try out the Sub City. I worked at one of these sandwich shops for two years and I never got tired of eating the food. Plus, I met my best college friends there, so I have fond memories.

People used to be so obsessed with these subs even after they were long gone from the area. One woman, who was originally from Iowa but had moved to Texas, would bring a cooler in to the store every time she was back for a visit. She would order a few of the subs with the condiments on the side, and then she would pack the cooler with the grub and drive all the way back to Texas. I hate to admit it, but I make my husband stop there every time we drive back through Iowa, so I guess I'm rather obsessed, too.

Hope you enjoy the sandwich. The recipe was inspired by delicious tastes and fond memories. And since there's no cooking involved, it's a quick and easy meal to enjoy.
