The Best Fruit Cake You'll Ever Eat

This is a recipe for a fruit cake like no other. Now most people do not like this particular cake. It is always dry and hard. Well, my Mother made many a fruit cake until she created this recipe. It is delicious, moist and very tasty. Nothing at all like the store bought cakes at SuperValu people try and pawn off on other relatives. Give it a try and you will not only be surprised but shocked by the results. Each year at holiday time we couldn't wait till this fruit cake was made so we could slice into it knowing it is the best fruit cake we ever ate.

Ingredients:

  • 1 1/2 cups raisins
  • 1 1/2 cups dates chopped
  • 1 3/4 cups sugar
  • 2 cups of boiling water
  • 5 tablespoons Crisco
  • 3 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon cloves
  • 1/2 teaspoon salt
  • 1 cup chopped nuts
  • 1 cup candied fruit chopped
  • 1/4 cup sherry or brandy

Directions:

  1. In a medium sized sauce pan add 2 cups of water and bring it to a boil.
  2. Add raisins, dates, sugar, and Crisco into boiling water and simmer for 20 minutes.
  3. Then put pan aside to cool.
  4. Sift dry ingredients together in a separate bowl.
  5. Add the mixture from the pot and mix everything together gently.
  6. Preheat oven to 325'.
  7. Grease and flour two loaf pans, or use Bakers Joy.
  8. Pour cake mixture evenly into the 2 prepared pans.
  9. Bake in oven for 1 1/2 hours.
  10. Remove fruitcake from oven and let cool for 10 minutes.
  11. Then remove cake from pan and place on a cooking rack.
  12. When the fruitcake is completely cooked, transfer it to a Tupperware cake taker, platter or cake dish.
  13. Enjoy!

Suggestions:

  • This fruit cake will be a surprise to all who try it. It is moist and never dry.
  • It is a heavy cake so you will not want to serve very large slices. Your guests can always go back for seconds.
  • Prepare this recipe in small loaf pans and bring a small cake to friends and relatives as a holiday dessert to share. Once they take a bite they will ask for the recipe.
