The Best July 4th Dessert: Lemon Iced Cake

This is a Simple Recipe that Will Sure Get the Attention at Your Independence Day Celebration

Keep in mind this is for about 12 servings.

Ingredients

3 eggs

1/2 cup water

3/4 cup vegetable oil

1 (18.25 ounce) package lemon cake mix

1 (3 ounce) package lemon flavored gelatin mix

1 tablespoon water

1/3 cup lemon juice

2 cups confectioners' sugar

2 to 3 tablespoons butter, melted

Directions

Preheat oven to 350 degrees F. Grease and flour a 9x13 inch pan.

In a big bowl be sure to stir together the cake mix and the lemon flavored gelatin mix. Make a well in the center and pour in oil, 1/2 cup water and eggs. Beat on low speed until fully blended. Scrape bowl and then beat 4 minutes on medium speed. Pour batter into ready pan.

Bake in preheated oven for 40 to 45 minutes. Allow to this to cool before serving.

To make the glaze: In a medium bowl, merge lemon juice and confectioners' sugar. Beat in the melted butter and 1 tablespoon water. Then poke holes in the top of the cake and pour glaze over and enjoy.
