This is a delicious chicken breast recipe that features many different flavors and tastes. It sounds difficult to make, but is actually very simple.
Ingredients for the chicken breast:
4 large boneless and skinless chicken breasts
4 thinly sliced pieces of Prosciutto
4 slices of smoked mozzarella
1 ½ cups fresh baby spinach
Black pepper, to taste
Salt, to taste
2 Tbsp. olive oil
Optional Garnish:
1 Cup either green or black olives; whichever you prefer
Also needed: toothpicks
To prepare the chicken, you'll need to rinse off your chicken breasts and pat them dry. After each is rinsed and patted dry, you'll want to cut a slit in each breast to create a pocket. This is where you will stuff your chicken with the Prosciutto, mozzarella, and ¼ of the baby spinach leaves. After you have stuffed your chicken breasts, seal them up with a toothpick. After they are sealed, season the chicken breasts with the salt and pepper, to taste.
Next, take the olive oil and heat it in a large non-stick frying pan or skillet over medium heat until it is hot, but not smoking. Once the oil is hot, place the chicken in your pan and start to sauté, turning once, until they are beautifully browned. This will take five to ten minutes per side.
While the chicken breasts are cooking, you will want to heat the oven to 350 degrees F. Place the browned chicken breasts in the oven to finish cooking. The chicken will have clear running juices when completely cooked. Time until completely cooked varies, be sure to check the chicken breasts before removing from the oven.
Ingredients for the White Wine and Mushroom Sauce:
1 lb. or 1 16oz. package of fresh already sliced mushrooms (whichever variety you prefer)
½ cup chicken broth
½ cup white wine
To the pan you used to brown the chicken breasts, add the mushrooms and cook for 2-3 minutes or until they are softened. Once they are softened, add the broth and the white wine and simmer for about 10 more minutes or until the sauce has reduced.
Once your chicken breasts are completely cooked through, remove them from the oven, discard the toothpicks, and place them on a large decorative platter and pour the sauce over them.
The olives are an optional garnish that works deliciously with this meal. You would garnish with the olives after the sauce has been poured over the chicken breasts.

Ingredients for Cauliflower Gratin:
1 head of cauliflower, broken into florets (discard the stems)
1 ¾ teaspoon salt
¼ teaspoon pepper
½ cup breadcrumbs, plain
1 cup heavy cream
¾ cup shredded sharp cheddar cheese (or whatever cheese you prefer)
¼ cup melted butter
Optional Garnish:
Parsley
To make the cauliflower gratin side dish, you will first need to heat your oven to 350 degrees F. Next, you will need to steam the cauliflower for about five minutes until it is tender, and drain well. Spray a two-quart baking dish with cooking spray (to prevent sticking). Add the cauliflower and then pour over the cream, add the salt and pepper, and lastly the cheese. Make sure to cover all of the cauliflower. Give the cauliflower mixture a light toss.
Mix together, the melted butter and the breadcrumbs and sprinkle over top the cauliflower dish.
Bake the cauliflower for 30 minutes or until it is hot and bubbly.
Adding a little parsley on the top for garnish makes this dish complete!
Once you have made your main dish, the chicken breast recipe, and finished the side dish of cauliflower gratin, you are ready to plate your delicious meal and have a wonderful dinner.
