Ingredient List
8 boxes frozen chopped spinach
1 pkg prepared phyllo dough (usually found in the frozen food dept. of the grocery store)
8 large eggs beaten
1 stick of butter melted ( it make take a little more depending on how generous you are with it)
11/4 lb feta cheese (crumbled)
1tsp salt
1/2 tsp ground pepper
1 tsp nutmeg
Preheat oven to 350 degrees
First of all begin by defrosting the spinach, you can either defrost it overnight or in the microwave. Once it's fully defrosted make sure to squeeze out all excessive moisture. This step is very important , because if it's too wet it will make the bottom crust too soggy. Next mix together the spinach, eggs, salt, pepper, nutmeg and feta cheese in large bowl.
Then butter the bottom and sides of a 9x11 casserole dish. Make sure the phyllo dough is defrosted . You may want to cover the phyllo dough with a clean damp kitchen towel in between use so that it doesn't dry out and fall apart. If it does fall apart you can still use it just butter it well and when it bakes you won't even know the difference. Start by putting down the first sheet of phyllo dough and using a pastry brush , brush the top with the melted butter then top with another sheet of phyllo and brush with butter . Continue this process until you have 10 sheets on the bottom.
Now it' time to scoop the spinach, egg and cheese filling onto the phyllo dough and spread it out evenly. Next, top with a sheet of phyllo and brush with butter, repeat this process until you have 10 sheets of phyllo dough on top. Make sure that the top is very well buttered.
Bake the spinach pie in the oven at 375 for approximately 30-35 minutes or until the top is flaky and golden brown. Remove from oven and let cool slightly before cutting. The spinach pie is delicious warm or cold. Enjoy.
