I really realized my addiction for the Vegetarian Grinder from Lizzie's Lunchbox when I moved out of the DFW area and moved back to San Antonio. Every time I would go to visit my best friend in Burleson, The Vegetarian Grinder was the only thing I'd crave from the area as far as a meal was concerned. As much as I love Spiral Diner's sandwiches and burgers, the Vegetarian Grinder from Lizzie's Lunchbox blows Spiral Diner's selections out of the water. Nothing from Spiral Diner can compete with the Vegetarian Grinder. (Then again, it has real cheese!)

When I talk highly about this sandwich, I am not alone. I am actually not a vegetarian, but I prefer the vegetarian grinder over the meat grinders! It is just that good. You know it's a good sandwich when you love meat but don't miss the meat when you eat a sandwich. Anyhow, my younger brother happens to be a vegetarian, and a huge foodie. We'd search high and low throughout the DFW area, trying to find the best vegetarian meals. Little did we know we'd find our gem at a little tiny drive through called Lizzie's Lunchbox down in little ole' Burleson, TX. The place is rightly named, Lizzie's Lunchbox. It is so small, it is only a drive-through. Lizzie and one other lady run the place. She decided to start a business, so she started cooking from cookbooks, not knowing it would be a natural talent! Now local businesses ask her to cater events and provide breakfasts and dinners to corporate events. She also has a monthly menu of home cooked meals, and they are good. You'll feel like you're at grandma's house eating a home cooked meal. Nothing about her little drive through feels like restaurant food. It just feels like good food made from a great cook who wants to share her talent with people like myself who don't have the time to make a home cooked meal from scratch.

Anyhow, back to this amazing sandwich. After my little brother moved out of the DFW area and while I was still living there, any time he knew I was coming south to visit, he would only have one request-- for me to bring the Vegetarian Grinder home! I'd drive up to Lizzie's Lunchbox, ask for the grinder, but ask for it to not be grilled. Then Lizzie would wrap it up and I'd take it to my brother four hours away and he'd put it in the toaster oven once I got it to him. It's just that good.

Now, why is it called a Grinder? Well, I asked Lizzie the same thing. She said a Grinder is an Italian sandwich that is made with a long hoagie that is split lengthwise and opened creating a "V" then stuffed with vegetables and the like. What makes her vegetarian grinder special is that once the hoagie is stuffed, it is topped with fresh slices of tomato, course black pepper and sea salt, grilled onion, and then the entire thing is covered with a huge slice of melted cheese to hold it all together. It is a spicy sandwich stuffed with grilled bell peppers, black olives, pepperchinis, and a spicy wing sauce. We tried to make it at home once we both moved out of the DFW area, but simply put, no one can make a vegetarian grinder like Lizzie, of this I'm convinced! So if you're a vegetarian in the DFW area, make a trip to Burleson, TX sometime and check it out!
