Here is the recipe that I am willing to share with all of you, but be aware it is time consuming and a lot of work to get three small one and one loaf sized fruitcake. I hope you will attempt it just the same as it is without a doubt one of the best you will ever taste. All it has in it is pecans, candied pineapple, candied cherries and a small amount of flour, but it is extremely rich because of the butter and eggs.
ROBBIE'S CHRISTMAS FRUIT CAKE
DO NOT PREHEAT THE OVEN!!!!!
3/4 Lb. cut up candied red & green cherries,
1 Lb. cut up candied pineapple,
4 c. shelled & broken pecans,
1/4 cup flour
Chop nuts & fruit to medium sized pieces. Dredge
in flour. Set aside.
Now cream until light and fluffy:
1//2 lb. butter
1 cup sugar.
Add 5 beaten eggs.
Mix well.
Mix together 1 3/4 cups flour
1/2 tsp baking powder
Add to the butter-sugar mixture.
Add 1/2 oz. bottle Pineapple or almond extract
1/2oz. vanilla extract
1/2 oz. lemon extract.
Pour all this into a greased and floured tube pan (or into a couple of loaf pans). Place in a COLD oven at 250' for 2 1/2 hours for loaf pans and 3 hours for tube pan.
Cool in the pan. Keep well wrapped when not using as it will dry out. If it looks like there is to much butter in the cakes, do not worry about it as it cools the butter absorbs into the cakes if it is left standing. When the cake springs back when touched lightly with fingers, it is done.
Pour brandy or rum over the cake, if desired and let sit two weeks for the best taste.

This sounds good and much better than the dry, crummy cakes you purchase at the store.
Thanks! I must try this. I love lots of fruitcakes and this one sounds especially good. My mother used to make one that she put in the frig for a week or two and poured grape juice over it from time to time. Seems like it was a lot like this one, but I think it had graham cracker crumbs in it. Sure would like to find the recipe. She did so much of her cooking out of her head.
