The Great Zucchini-Tomato-Cheese Bake -- Colorful, Easy to Make -- a Kid and Adult Pleaser
Crushed, Seasoned Croutons Are the Secret Ingredient
It's the season. Gardens, farmers'markets, and grocery stores have an abundance of beautiful fresh, ripe vegetables, especially ripe zucchini and tomatoes .Make this delicious casserole once and it will become a family favorite. Prepare the vegetables and let your oven do the work.
Ingredients:
- 1/4 c. olive oil
- 1 medium chopped onion
- 4 c. thinly sliced zucchini....yellow, green or a mixture
- 3 medium tomatoes chopped
- 1 1/2 c. shredded mozzarella cheese
- ¾ c. grated parmesan cheese
- ¾ c. crushed, seasoned salad croutons (put croutons in a plastic bag. Seal and crush to a medium texture)
- garlic powder, oregano, salt and pepper. Season to taste.
- 4 Tb. butter
Preheat the oven to 350*F.
- Butter a large rectangular casserole dish.
- In the dish, layer ½ of the following: zucchini, onion, tomatoes, crushed croutons mozzarella and parmesan cheese.. Season lightly with oregano, garlic powder, salt, and pepper. Drizzle with ½ the olive oil.
- Repeat the layers and lightly season. Drizzle with the remaining olive oil, and dot the top with butter.
- Bake uncovered about 30 minutes, until the vegetables are tender and the top is golden brown. Serve hot. Reheats nicely in the microwave.
