Great Beer is Brewed by the Magician of the Mill

In the late 1890s, Littleton's Rough and Ready Flour Mill had a big problem. It was too small. It needed more room for shipping and storing the freshly ground flour. On land once homesteaded by Littleton's founder, the Rough and Ready Flour Mill built an imposing 5 story structure to give it the room it needed.

Now, fast forward 105 years. That very same towering building that gave Rough and Ready the extra room it needed is giving The Mill Steakhouse the room it needs to make great beer.

The Longs Peak Lager, an American style light pilsner, and the Rocky Mountain Red Ale are favorites at the brewpub. If you are searching for a nice brown ale, pick the Ghost Town Brown that has just a hint of toffee and chocolate. The Pioneer Pale Ale has a nice "hoppy" flavor. There is also an award winning English style India Pale Ale on tap and if you are a Stout lover, the thick and creamy Roadhouse Stout will not disappoint.

The chefs at The Mill have worked overtime, creating a delicious selection of food. Steak is king at The Mill, from the full pound Classic Cowboy Ribeye to the Brewsteak, with its Rocky Mountain Ale marinade. Other favorites include Pacific Salmon that is glazed with French mustard and wildflower honey, chicken breasts dipped in a garlic, lemon, and black pepper marinade and wild mushroom buffalo meat loaf.

Brewmaster Greg Shofner is the magician of The Mill. A professional magician by trade, Greg also works his magic in the brewery, producing around 500 barrels of beer a year. He got his first taste of brewing beer like a lot of master brewers. He began brewing at home. "The first beer I ever brewed was in my closet," Greg said. "I was just a teenager." He laughs and admits…"that was the worst stuff I ever tasted." But, Greg kept practicing, perfecting the art of brewing beer. Eight years ago, he landed a brewing job at Thunder Ridge Brewery, in Colorado Springs. For the past four years, Greg has been the man behind the beer at The Mill.

The Mill is not the only brewpub in Littleton. Several chains, like Rock Bottom and CB & Potts, have restaurants in town. But, The Mill is Littleton's only hometown brewpub. It is also the only one lucky enough to live in a 105 year old building, one of the oldest historic buildings in town.
