The Perfect Stuffing Recipe for Your Turkey

Caribbean Stuffing
(Rice with Raisins)

Ingredients:

3 cups of rice
1/2 cup of butter or margarine
1 cup of raisins
2 chicken bouillon cubes
2 finely chopped onions
3 cups of water
1/2 teaspoon of salt
1/2 teaspoon Achiote (Annatto)

Preparation:

In a pot or kettle add the butter and the finely chopped onion, then the cubes and the salt.
Keep moving until golden brown, then add the water and the achiotte.
When the water starts to boil, add the rice.
As soon as the water diminishes, lower the fire and put the lid on.
After ten minutes, move the rice and add the raisins. Cook for 5 to10 more minutes until ready.
Let it cool and stuff the seasoned turkey.

Yoly's Tips:
Make sure the turkey's cavity is not very full.
You can inject a little butter to the breast so the Turkey would be juicier. Good luck and as we say in the Caribbean... Buen Provecho!!

Annato or achiote is available in most supermarkets. Just go to the ethnic section or ask for help. You can also use achiote for regular yellow rice, but remember to use it sparingly. Just a little goes a long way.
