Think they sell just a few of these pies a day? Think again. A reported sixty to ninety people a day are plopping down their hard-earned cash for one of these beauties.
Word spreads quickly. Manhatteners are not the only ones privy to the sweet delicacy now. Momofuku Milk Bar recently started mailing Crack Pies to those who are not lucky enough to live near the bakery.
Crack Pie Recipe - The Crust
Crack pie puts a unique twist on the traditional pie crust. This crust is more like an oatmeal cookie than a pie crust.
Ingredients:
*2/3 cup plus 1 tablespoon flour
*1/8 teaspoon baking powder
*1/8 teaspoon baking soda
*1/4 teaspoon salt
*1/2 cup softened butter
*1/3 cup light brown sugar
*3 tablespoons sugar
*1 egg
*1 cup rolled oats
1.) Heatoven to 375 degrees.
2.)In a bowl,mix the flour, baking soda, baking powder, and salt.
3.) Mix ingredients in large bowl with an electric mixer. Beat the butter, brown sugar and sugar until light and fluffy.
4.) Whiskthe egg into the butter mixture until fully incorporated. Avoid adding excess air.
5.) With the mixer still running, beat in the flour mixture, a little at a time, until combined. Stir in the oats until incorporated.
6.) Spread the mixture onto a 9-inch-by-13-inch baking sheet and bake until golden brown, about 20 minutes. Cool on a rack. Crumble the cooled cookie to use in the crust.
7.) Combine the crumbled cookie, ¼ cup butter, 1 ½ tablespoons brown sugar and a dash of salt in a food processor until evenly combined.
8.) Divide the crust between two 10"inch pie plates. Press the crust into each shell and form a thin, even layer all the way through the crust. Set aside.
Crack Pie - The Filling
The filling to this fabulous pie is similar to a Chess Pie filling.
*1/2 cups sugar
*3/4 cup plus 3 tablespoons light brown sugar
*1/4 teaspoon salt
*1/3 cup plus 1 teaspoon powdered milk
*1 cup melted butter
*3/4 cup plus 2 tablespoons heavy cream
*1 teaspoon vanilla extract
*8 egg yolks
*Powdered sugar to garnish
1.) Heatthe oven to 350 degrees.
2.) In a large bowl, whisk together the sugar, brown sugar, salt and milk powder. Whisk in the melted butter, then the heavy cream and vanilla.
3.) Gentlywhisk in the egg yolks.
4.) Dividethe filling evenly between the 2 prepared pie shells.
5.) Bakethe pies, one at a time, for 15 minutes, then reduce the heat to 325 degrees and bake until the filling jiggles a little and is golden brown, about 10 minutes.
6.) Remove the pies and cool on a rack.
7.) Once cooled, refrigerate the pies until well chilled. The pies should be served cold. The filling will be gooey.
8.) Dust with a small amount powdered sugar before serving.
