Meats include baby back ribs, boneless beef short ribs, pulled brisket and pork, chicken, ham, turkey and spicy smoked sausage. The sauces are Mild (Sweet), Medium (Tangy), XXX Hot (Tangy Hot) and Jessica's Fire (Sweet Hot).
Side dishes are equally as fabulous! Spicy BBQ pit beans, Cheesy Corn, Red skinned mashed potatoes, Coleslaw, Chipotle Potato Salad & 4 bean salad add an incredible addition to your meal.
My meal started with Tracy's Famous Illegal Babyback Ribs. Fall of the bone tender with just the right amount of hickory smoke. With the beans and cheesy corn as my sides, it was filling and delicious! I finished with the Carrot Cake for dessert... what I truly feel is the best carrot cake I have ever had! So moist and delicious - and the slice was enough for at least 3 people. What a wonderful thing to take home in my doggy bag!
After dinner I asked the owner, Tracy Webb, about the origins of the Rib House. In search of the Great American Dream, Tracy and Merry Ann Webb, who were born and raised in Kansas City, Missouri (The BBQ capital of the world!) moved to Colorado in 1989. For the next 12 years, they searched for true Kansas City style BBQ. Unable to find any good BBQ in Colorado, they decided in 2001 that they would give Colorado real, authentic Kansas City style BBQ. Hence, the Rib House was born on July 5th, 2001! Colorado was never famous for BBQ - until now!
I also learned more about the catering The Rib House does. The Rib House will cater for groups of 10 people to 1500 people all over Colorado and even into Wyoming! Their website, www.theribhouse.com, has information about the catering, restaurant menus, maps to the different location... pretty much all you might need to know. If you love BBQ, you know it is very hard to find good BBQ in Colorado. Trust me... you will find good - no you will find great BBQ at The Rib House!
