Cod, Salmon, Swordfish ...Winners In Minutes

I really enjoy a good fish dinner. I used to only eat fish in restaurants though. That was before I met Leo and overcame my fears. First off, I thought it would stink up the whole house. Secondly, I had no clue what to do with the slab once I got it home. Ahh, the beauty of a little knowledge. After spending a few minutes with the local fish monger ( I hope that's the right word. I've always looked for the opportunity to use it....It's so thirties, lower East Side)., I went home with confidence and a neat little package wrapped in white paper. All went well and I returned to Leo time and time again. Now, I can share those little secrets with you.

First, I'll offer you this great, yet simple, Cod recipe. You can put it together in moments and it is an authentic Italian recipe.
Layer some sliced white potatoes and sliced white onions in a casserole dish. Coat that with olive oil and sprinkle some rosemary over it,too. Lay pieces of cod on the mixture. Cover that with plum tomatoes, sliced the long way. Cover with a bit of fresh garlic. Top with salt and pepper to taste, and then some parsley. Bake 40-45 minutes at 350 degrees. Then sit back, enjoy, and lick your lips while you rub your tummy and wish you had more!

Next time, Leo gave me instructions for this wonderful swordfish recipe. It's made with artichokes, olives and capers. C'mon...that's just heaven on a plate!
Heat the oven to 400 degrees. In a pan, add about 1/4 cup of olive oil. Over medium-high heat saute 8 garlic cloves sprinkled with salt & pepper to taste, 1/8 tsp. dill, 1/4 tsp Italian seasonings, 1/4 tsp onion powder. After 3 minutes, reduce heat to low. Add a small jar of artichoke hearts, 1 tab. capers, as many pitted black and green olives as you like along with about 1/4 cup of the juice the olives were in, plus 1/4 cup of dry white wine. Heat the mixture. Nestle the swordfish (2-3 nice sized- pieces) in a casserole dish. Pour the mixture over the fish and bake 16-20 minutes. Garnish with some diced tomatoes.

Finally, I offer you a scrumptious and super fast salmon dish. Cover the bottom of a casserole dish with olive oil and about 1/4-1/2 cup chopped garlic. Then create a layer of thinly sliced white potatoes, Top that with a layer of fresh baby spinach without the stems. Pour a little olive oil over that and then lay on your salmon pieces, about 3 nice sized ones. Cover it all and bake for 40 minutes at 350 degrees.

Yup, Leo was some fish monger. I went back so many times, I ended up marrying the big galoot. No just kidding. I was trying to distract you from expecting an answer to the part about stinking up the house. Well, there's no simple answer to that one. Turn on your oven vent if you've got one. Simmer some potpourri on the stove. Burn incense. I like to have enough wine to reach a point where the smells are wafting over me and I'm picturing myself in any Italian location, knowing people there would be savoring the smells and then calling over the waiter to ask for another bottle of vino. Works for me.

    mmm some good fish recipes to try. I love fish and don't make it as often as I like because my family are a bunch of fussy folks that don't think they like fish.
