Those Little Extras in the Kitchen

Tartar Sauce, Pico De Gallo, Guacamole, Cucumber Sandwiches and More

Here's some quick and easy recipes at your service ready to mix and fix. I just went with whatever came to mind to give you a few fun and easy ideas this spring and summer for those delightful little extras in the kitchen.

Tartar Sauce

Haven't we all fallen in love with restaurant tartar sauce? It's actually easy to make your own right at home. You'll need the following ingredients to mix in a bowl. Go ahead and slice open a lemon and set to the side. Chop yellow or white onions into small pieces on a cutting board and have them waiting. In a bowl start with one cup of mayonnaise and add sweet relish. Throw in the onions. Squeeze most of the lemon's juice into the mixture. Add salt and pepper. Stir thoroughly and test as you go along without lapping in the food. When you can honestly say it's tasting like tartar sauce it's ready to be spread and smothered onto crispy, breaded fish or lush hush puppies.

Pico De Gallo

Word on the street is that Pico De Gallo recipes differ from household to household. It's really up to the individual. This is how I've been making it for years. Just chop up your tomatoes, yellow or white onions
along with some green ones if you're a big fan and add fresh cilantro plus plenty of pepper and a just enough salt. Mix thoroughly with fresh lemon juice. I remember enjoying Pico De Gallo on corn bread at Luby's restaurant when I was a kid, but now I make my own right at home and you can too.

Guacamole

Skin your avocados and take the huge seeds out of the centers. Mash the avocados in a bowl with a spoon or a potato masher. Add salt and lemon juice. It's really that easy though you can add cilantro
and tomatoes, I hear.

Note: If the avocado is too ripe it's kinda gross with a brown mess through-out your mixture. However, avocado when it's not ripe enough for guacamole will be nearly impossible to slip or scoop and work with entirely.

Cucumber Sandwiches

Peel and slice a cucumber though you're only to use four to eight slices for one sand which. You can save the rest of the vegetable for a salad later on unless you're making these for several other people. Spread cream cheese on two slices of bread and place the cucumber slices neatly on top. When you put the two slices of bread together you have your cucumber sandwich.Try it along with cold tomato soup for lunch.

Easy Lemonade

Let's say you're not up for squeezing who knows how many lemons into a pitcher for homemade lemonade, but you want it to at least have some natural ingredient such as real lemons. Simply
add real lemon slices to a store bought lemonade mix and water. This is great for an old fashioned
Lemonade Stand. Kids love it!

Hot Dog Tip of the Day

Grill a tastier hot dog with Worcestershire Sauce. Yummy!
