Don't go empty handed to any get together this year. Take the hostess some homemade cookie bars that are different from the usual holiday fare. Most of these bars will freeze nicely to be eaten after all the other holiday goodies are gone.
Chewy Oatmeal Raisin Bars
1 ½ cup of quick biscuit mix
1 ½ cup of quick oats
1 cup of brown sugar
½ cup of raisins
¼ cup chopped walnuts
¼ cup semisweet chocolate chips
½ cup of soft butter
1 large egg
Mix the ingredients in a large bowl except the chocolate chips. Press the mixture into a 13x 9x2 pan. Add the chocolate chips last. Bake in a preheated 350 degree oven for about 15 minutes. Do not over bake.
Chocolate Peanut Butter Bars
1 cup of brown sugar
½ cup of softened butter
½ cup of peanut butter
1 large egg
1 cup of all purpose flour
¾ teaspoon baking soda
1 ½ cup instant oatmeal (can be cinnamon flavored)
6 oz package of semi sweet chocolate chips
Cut the brown sugar, peanut butter, into the butter. Mix until it appears creamy. Add in the egg and mix it well. Mix in your flour and baking soda. When you have a coarse batter added your quick oats and d chocolate chips. Spread the batter in an ungreased 13 x 9 baking dish. Bake for about 25 minutes in a preheated 350 degree oven. Cool for a least a half an hour before cutting into bars. This makes about 2 dozen bars.
Coconut Bars
½ cup of softened butter
½ cup of brown sugar
1 ¼ cup of all purpose flour
¼ teaspoon salt
1 tsp vanilla extract
2 eggs
1 cup of chopped walnuts
1 3 ½ oz can of flaked coconut
Cream the butter and the sugar and then add the flour; mixing well. Beat the egg and vanilla extract and blend into the creamed butter. Lastly add your chopped walnuts and coconut flakes. Blend until you have a coarse batter. Bake in a 375 degree oven for about 25 minutes in a greased 13 x 9x 2 pan. When slightly warm cut into about two dozen bars.
