Want to try a new spin on Christmas fudge? How about adding some candy canes to it to give it some festive cheer and add some holiday color to your kitchen?
For candy cane fudge, you will need:
2 (10 ounce) packages vanilla baking chips
1 (14 ounce) can sweetened condensed milk
1/2 teaspoon peppermint extract
1 1/2 cups crushed candy canes
1 dash red or green food coloring
Preparation takes 20 minutes and these treats are ready in about 2 hours. This recipe will yield about 2 1/4 pounds of candy cane fudge.
To prepare, line an 8 inch square baking pan with aluminum foil, and grease the foil. Combine the vanilla chips and sweetened condensed milk in a saucepan over medium heat. Stir frequently until almost melted, remove from heat and continue to stir until smooth. When chips are completely melted, stir in the peppermint extract, food coloring, and candy canes. Spread evenly in the bottom of the prepared pan. Chil for 2 hours, then cut into squares.
Holiday Breakfast Frittata
Nothing says "Seasons Greetings" like a yummy holiday breakfast frittata. These take 15 minutes to prepare and 25 minutes to cook. Quick, easy, and delicious!
For frittatas, you will need:
1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
2 tablespoons butter or margarine
1/2 cup chopped tomoatoes
1/4 cup minced fresh parsley
5 eggs, lightly beaten
2 cups shredded mozzarella cheese
1/2 cup soft bread crumbs
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
To prepare, in a skillet you will need to saute the onion, green pepper and garlic in butter for 5 minutes or until tender. Remove from the heat. Stir in tomatoes and parsley; set aside in a large bowl, combine the remaining ingredients. Stir in reserved vegetables. Pour into an ungreased 9-inch pie plate. Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
Coffee Eggnog Punch
Try a new variation to the standard holiday eggnog concoction your grandma used to make. Make some coffee eggnog punch! Preparation time is 20 mintues!
You will need:
2 cartons (1 qt each) eggnog
1/3 cup firmly packed brown sugar
3 tablespoons instant coffee powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 quart coffee flavored ice cream.
To prepare, combine the first 5 ingredients in a large mixing bowl. Beat at low speed with an electric mixer until smooth. Chill 1-2 hours. Pour into a punch bowl and top the punch with scoops of ice cream! Enjoy!
