Three Homemade Pizzas: Vegetarian and Two 10-Minute Ones

First, here's a vegetarian pizza that's also low-fat and can be prepared in under 30 minutes:

Step 1
Heat the oven to 450 degrees F.
Knead 2 Tbs. wheat germ into 2 pkgs. (15 oz. each) of frozen pizza dough, thawed.
Spread the dough to ½" thickness onto a nonstick baking pan coated with cooking spray
.In a bowl, combine 1 cup nonfat ricotta cheese (or you can use shredded reduced-fat cheddar, crumbled low-fat feta, shredded reduced-fat Monterey Jack, shredded reduced-fat Italian blend, nonfat cottage cheese, pureed or reduced-fat cream cheese); ½ cup shredded part-skim mozzarella cheese; 1 tsp. minced garlic; and ¼ tsp. each dried oregano and thyme.

Step 2
Spread mixture onto the crust.
Top with 1 bunch broccolini florets (or you can use 1 cup of Mexi-corn mix, 1 pkg. (10 oz.)spinach, thawed, 1 cup of cauliflower florets, 1 cup of asparagus, blanched, 1 bunch of broccoli rabe, blanched or 1 cup saut©ed mushrooms); 1/3 cup of sliced black olives (or you can use 1 Tbs. capers, 2 Tbs. seeded and chopped jalapenos, 3 pepperoni, coarsely chopped, ¼ cup of pineapple chunks, ¼ cup chopped sun-dried tomatoes or ½ cup of vegetarian protein crumbles); ½ cup of roasted red pepper strips; 3 plum tomatoes, sliced; and 1 yellow squash, cut in ribbons
.Coat with cooking spray.
Bake for 18 minutes.
Top with ½ cup shredded part-skim mozzarella; sprinkle the edges with 1 Tbs. wheat germ.
Bake for 2 more minutes.

10-Minute Asian Chicken Pizza
In a skillet over medium heat, cook 4 carrots, sliced; 1 green pepper, sliced; 2 ribs celery, sliced; 2 cloves garlic, minced; and 1 Tbs. minced ginger root in 2 Tbs. hot vegetable oil for 3 min.
Add 3 Tbs. low-sodium soy sauce; 2 Tbs. lime juice; ¼ cup of sliced water chestnuts; and ¼ cup each chopped fresh castrator and mint; cook until slightly thickened.
Stir in 1 ½ lbs. cooked chicken breast tenders.
Place on top of one 12" diameter prepared packaged pizza crust, toasted.

10-Minute Basil Shrimp Pizza
Spread one 12" diameter prepared packaged pizza crust, toasted with ¼ cup prepared pesto.
Top with 1 ½ lbs. cooked shrimp, peeled; ½ lb. asparagus tips, steamed; 1 pt. cherry tomatoes, halved; and ¼ lb. feta cheese, crumbled.
Drizzle with 1 Tbs. olive oil.
Pizza dough can also be used for all sorts of quick snacks. For example:
You can cut strips of the dough, twist them into spirals and then dust with granulated sugar and cinnamon. Bake until crispy. They'll taste great with hot chocolate or hot tea! Or.....
You can roll the dough strips into ropes, coat them with a butter-flavored cooking spray and then sprinkle with herbs or garlic.
Tie into knots and bake until golden.
