Breakfast Burrito
Ingredients:
Tortilla wraps (kind of your choice)
bag frozen pepper and onions or spring vegetables
sausage or steak or meat of your choice (optional)
eggs
shredded cheese of your choice
Salsa (optional)
Use the amount of ingredients for the number of people you are feeding (example-for one person use only about ΒΌ or less of the vegetables, one egg, equivalent of one slice of sausage et cetera)
Preparation:
Fry the sausage or meat and vegetables until almost done
Add the egg(s) and scramble the mixture together
Add the cheese at the last and let it melt into the mixture
Put mixture into a tortilla wrap and add any toppings (salsa et cetera)
Roll up the tortilla wrap and enjoy
Breakfast Pie (pie version of above recipe)
Ingredients:
Pie crusts (your choice of store brand or homemade)
bag of frozen pepper and onions or spring vegetables
sausage or meat of your choice (optional)
eggs scrambled
shredded cheese
Salsa, sour cream, or other toppings (optional)
Use amount of ingredients to fill a pie shell or shells
Preparation:
Fry meat and vegetables until vegetables are slightly al dente and meat is almost done
Bake the pie crust according to package directions
Add the vegetable and meat mixture to the pie crust
Pour the eggs over the vegetables and meat
Add the cheese on top of the mixture
Bake at 350 degrees until the cheese is melted and slightly brown and eggs are done
Serve warm with toppings of your choice
*You can use egg substitute for the eggs and also use fat free or low fat cheese et cetera to make a lower calorie and lower fat version of both of the above recipes.
Easiest Ever Poor Man's "Steak" Breakfast Sandwich
Ingredients:
Bread (toasted)
Eggs
Bologna (the best is garlic bologna) sliced
Sliced cheese
Preparation:
Fry eggs (do not scramble) in a round skillet if possible until done
Fry bologna until slightly "burnt"
Toast bread
Put a slice of bologna on the bread while it is good and hot
Put a slice of cheese on top of the bologna
Add a just cooked hot egg on top of the cheese (this way the bologna and egg will melt the cheese)
You can add mayonnaise or other condiments if you so desire
