Sugar-Free Apple Raisin Oatmeal Cookies
Makes 4 dozen cookies
Ingredients:
1¼ cups Equal® or Splenda®
1 cup applesauce
6 tablespoons butter
1 egg
1/3 cup milk
2 teaspoons vanilla extract
2 cups flour
1 teaspoon baking soda
1 teaspoon powdered cinnamon
¼ teaspoon powdered nutmeg
¼ teaspoon salt
1½ cups quick oats (uncooked)
1 cup raisins
Combine Equal® or Splenda®, applesauce, butter, egg, milk, and vanilla. Mix all wet ingredients with an electric mixer until well blended. In a separate container, sift together the flour, baking soda, cinnamon, nutmeg, and salt. Add the dry ingredients to the wet ones and stir the batter until it is evenly mixed. Slowly add the oats and raisins into the mixture, using a large spoon to stir all ingredients.
Drop the mixture by tablespoons onto a greased baking sheet. Bake the cookies at 350º F for 10-12 minutes until they are golden brown in color. Carefully lift the cookies from the baking sheet and let them cool on a wire rack.
Sugar-Free Pumpkin Nut Cookies
Makes 3 dozen cookies
Ingredients:
½ cup vegetable oil
2 eggs
1 cup Equal® or Splenda®
2 cups flour
1 teaspoon salt
1 teaspoon powdered nutmeg
1 cup mashed pumpkin (not pumpkin pie filling)
2 teaspoons cinnamon
1 teaspoon baking soda
1 cup raisins
1 cup walnuts or pecans
Mix the oil and eggs with an electric mixer until a fine emulsion forms. Add in the Equal® or Splenda® and beat until there are white fluffy peaks. Slowly add in the mashed pumpkin. In a separate container, sift together all the dry ingredients. Add the dry ingredient mixture into the cookie batter. Once this is mixed, slowly add the raisins and nuts.
Drop the batter by tablespoons onto a greased baking sheet. Bake the cookies at 375º F for 15-20 minutes. Once baked, cool the cookies on a wire rack.
Sugar-Free "Sugar" Cookies
Makes 5 dozen cookies
Ingredients:
1¾ cup flour
½ teaspoon baking powder
¾ cup butter
1 package of sugar-free gelatin (any flavor)
1 egg
1 teaspoon vanilla extract
Sift the flour and baking powder together; set aside. Cream the butter and gelatin, then add in the egg and vanilla. Slowly add the dry ingredients to the wet ones. Roll out the resulting dough with a wooden pin and cut into shapes.
Place the shapes onto a greased baking sheet and bake at 400º F for 8-10 minutes. Remove the cookies from the oven once they are done and cool them on a wire rack.
