Pesto Croissant Appetizers
Ingredients:
1 can of refrigerated crescent roll dough
2 ounces prepared pesto sauce
2 ounces grated Asiago or Pecorino Romano cheese
3 Tablespoons pine nuts
Cracked black pepper
Method:
Preheat oven to 375 degrees. Open the crescent roll dough according to package directions and separate the dough into eight triangles, laying them flat on an ungreased, nonstick baking sheet. Spread about one and a half teaspoons of pesto evenly on each triangle. Grind a bit of black pepper over each triangle. Top with the grated cheese and pine nuts, pressing the toppings into the pesto sauce and dough gently with the back of a spoon. Starting at the wide end of each triangle, roll the up dough into crescent shapes. Allow an inch or so of space between each croissant on the baking sheet.
Bake for 11 - 13 minutes or until golden brown at 375 degrees.
Variations: A sprinkling of bacon bits or chopped prosciutto can be added with or instead of the pine nuts.
Bacon And Cheese Croissant Appetizers
Ingredients:
1 can of refrigerated crescent roll dough
2 ounces of cream cheese or Neufchatel soft cheese, softened
2 ounces shredded sharp cheddar cheese
3 Tablespoons bacon bits or crumbled bacon
Method:
Preheat oven to 375 degrees. Open the crescent roll dough according to package directions and separate the dough into eight triangles, laying them flat on an ungreased, nonstick baking sheet. Soften the cream cheese by leaving it out at room temperature for an hour or so or by putting it in the microwave at 30% power for about 15 - 20 seconds in a small, microwave safe bowl. Mix in the bacon bits and the shredded cheddar cheese into the softened cream cheese. Then divide the mixture evenly among the dough triangles and spread it to a uniform thickness on each. Starting at the wide end of each triangle, roll the up dough into crescent shapes. Allow an inch or so of space between each croissant on the baking sheet.

Smoked Salmon Croissant Appetizers
Ingredients:

2 ounces of cream cheese or Neufchatel soft cheese, softened
3 ounces smoked salmon, flaked
Method:
Preheat oven to 375 degrees. Open the crescent roll dough according to package directions and separate the dough into eight triangles, laying them flat on an ungreased, nonstick baking sheet. Soften the cream cheese by leaving it out at room temperature for an hour or so or by putting it in the microwave at 30% power for about 15 - 20 seconds in a small, microwave safe bowl. Mix the smoked salmon into the softened cream cheese. Then divide the mixture evenly among the dough triangles and spread it to a uniform thickness on each. Starting at the wide end of each triangle, roll the up dough into crescent shapes. Allow an inch or so of space between each croissant on the baking sheet.
Bake for 11 - 13 minutes or until golden brown at 375 degrees.
Variations: A few teaspoons of drained capers or diced green onions can be added to the cream cheese mixture.
