Ingredients

2 cups prunes - pitted and chopped
1 cup raisins
1 cup walnuts - chopped
1 cup cherries - red maraschino or dried - chopped
1 cup sugar
1 cup flour
1 cup bread crumbs - fine and unflavored ( packaged or home made)
2 tbsp cinnamon - ground
1 tsp ginger - powdered
1 tsp nutmeg - ground
1 tsp brown sugar (light or dark)
6 eggs
1/2 cup brandy

Cream Butter, Sugar and Brown Sugar
Be sure butter is soft and room temperature. Cream until smooth and not lumpy.2
Gradually Add 6 Eggs and Brandy
Slowly add in the 6 eggs and gradually mix. Add eggs one at a time to assure proper consistency. Gradually add in the brandy.3
Combine Prunes, Raisins, Cherries, Nuts,Flour, Bread Crumbs and Spices
In a separate bowl, combine the prunes, raisins, cherries and walnuts. Add the flour and mix so that all ingredients are dusted. Add bread crumbs4
Combine Both Mixtures and Add To Baking Pan
Add the prune mixture to the egg and butter mixture. Blend at low speed with the mixer to form a batter. Pour batter into a greased and lightly floured baking pan.5
Bake in Pre-Heated 350 Degree Oven For About 45 Minutes
Bake in a pre-heated 350 degree oven for 45 minutes or until lightly and evenly browned. Pour additional brandy on the pudding if desired. Serve warm with a dollop of whipped cream and a glass of ruby port or cream sherryTip
An electric mixer, "stick blender" or food processor is needed. The traditional hand cake mixer offers you the best control. Be sure the bread crumbs are unflavored and finely textured. Use your favorite brandy ... flavored brandies work too but don't use cheap "imitation" liqueurs.
