One option is to book a trip in a hot air balloon (but do check that your spouse does not have a mortal fear of heights). If you live in a city, this can often be arranged surprisingly nearby or you can opt to travel to a regional beauty spot and take the tour there.
One advantage of a balloon is that there is little feeling of motion (great for those who can get seasick). At the level that most commercial balloons fly, the temperature will be similar to (or possibly higher due the hot air burners) than the surrounding air. Overall a balloon trip can be truly memorable and a great way to see a part of the world you perhaps thought you knew well. Having said that, there are a few things to take into account.
Perhaps most obviously, the trip cannot be guaranteed (this maybe another reason to book it reasonably close to where you live). Certain weather conditions, particularly high winds, will mean all balloon flights will be canceled. Equally, it is unlikely to take off in low clouds (not least this would spoil the views). Remember the company should be as concerned about a safe landing as the actual flight experience.
Reliable companies should offer to refund the price (perhaps less their booking fee) or allow you to fly on a different day.
Do check the experience of the company you want to use. In the USA the Federal Aviation Administration sets some minimum standards that all operators must reach but this says nothing about the age of the balloon, safety record or even if they are insured. You should be able to gauge their attitude to these issues from their website and, if, in doubt, you can always phone to check.
If it is a popular beauty spot, it is likely there is more than one local operator and you should try to compare descriptions and prices. The better operators may well be more expensive if they have invested in more modern equipment, better pilot training and have a more generous package if the flight is canceled due to adverse conditions.
