Tips for Freezing Sweet Corn

Freezing corn is an easy fun way to preserve food for future use. Sweet corn is the kind of corn you want to use when you freeze corn. Sweet corn holds its sugar when you freeze it so it can last in the freezer for months and still taste good and sweet.

When you freeze corn you should use the freshest corn you can. Just picked corn is the best but you can freeze corn that has been picked a couple days ago as well. The sweetness of the corn will depend on the type of the corn you use to freeze. The sweeter the corn is on the cob the sweeter it will be after it is frozen.

To freeze corn you will need some nice freezer bags in the size that you want to freeze the corn in. You can also use storage containers that are recommended for use in the freezer but the plastic freezer bags take up less space in the freezer and they work very well. You can also toss the freezer bag after you have used its contents.

Boil a pot of water that is beg enough for the corn to fit in. Dip the ear of corn in the boiling water and keep it there for about one minute. Then take the corn out of the water with a tongs and immediately place the corn in some cold water. This process seals in the sugar in the corn and keeps the sugar there after the corn has frozen. After the corn is cool take a knife or a corn cutter and cut the kernels off of the cob. It is a good idea to use a cutting board when you cut the kernels off of the corn.

Then put the corn kernels into the freezer container of your choice. Fill up the container and try to get out as much air as possible before you close the container. Then put in the freezer and let it freeze for later use. The frozen corn is then ready for you to use when you are ready for it.

When you want to heat up the frozen corn you can put the corn in a small amount of boiling water or you can microwave the frozen corn until it is ready to eat.

Always be careful when you handle hot water and when you cut corn off the cob.
