Tips for Grilling Tofu

Grilling is in full swing during the summer months and if you are lucky enough, you can grill all year long. There are times when you just want to try something new and vegetables are passé. Try tofu. Whether you are vegetarian or not, tofu makes and interesting addition to any grilled meal. One only has to keep a few simple tips in mind when working and grilling with tofu (it should be noted that these tips are courtesy of Gaiam Life and Vegetarian Barbecued Tofu by Jill Harris):

1. There are different types of tofu, but for grilling purposes, firm or extra firm tofu works the best. Whether or not you use firm or extra firm, the tofu will need to be drained and dried to accept any flavorings that are imparted into it.

2. To grill the tofu better, cut the tofu into half inch slices (1/2") also known as "cutlets". Any thinner, there is a chance that it could fall through the grill.

3. Tofu is a big "sponge" meaning it can soak up any flavor that you wish to impart to it. Any of your favor flavorings go well, including those you use for steak, chicken, pork or fish. It can be as simple as soy sauce and balsamic vinegar or lust your favorite barbecue sauce.

4. Lightly oil the grill to help keep the tofu cutlet from sticking to the grill during cooking. Also, make sure that your grill is clean will also help ensure that the tofu cutlet will not stick.

5. Make sure that your grill is heated to medium to high heat. Grill until the tofu cutlet is crispy on the outside and warm inside. Cooking time is about fifteen to thirty minutes depending on the thickness of the tofu cutlet and the heat of your grill. Also using a higher heat will give the tofu cutlet the grill marks that are the hallmark of all grilled foods.

6. For a "meatier" texture in your tofu cutlet, freeze the tofu first. Once frozen, layer between paper towel and place between two plates. This will draw out excess water, thus given the tofu cutlet a meatier texture.

7. Before you place the tofu cutlet onto your grill, pat the cutlet dry of any excess moisture. This will keep the smoke down while grilling.

8. For any marinade that you use, make sure that the tofu cutlet is fully immersed and kept refrigerated during its marinate time which can be as little as a half hour up to 24 hours. The longer time marinade time, the stronger, more intense flavor you will have.
