The Perfect Day to Ask a Single Mother to Marry You
Plan Something Special
Plan a special activity, as you would for her on any other Mother's Day. A nice lunch out, with the children. Do not act like you are doing anything out of the ordinary so she doesn't expect anything.
Get the Children Involved
If they are older, you can involve them in the proposal. For example, have each child bring her up a special present, such as a rose each and then you follow with the bouquet to hand to her, get down on one knee and propose.
Buy Her a Mother's Ring
Buy her a mother's ring to celebrate the day. Include a tag that says something like "To the most wonderful single mother in the world." Buy her an engagement ring and place it, either in a separate box, or underneath the lining of the mother's ring box and tell her there's more, to lift up the flap. Include a tag on the engagement ring that says "To the most wonderful girlfriend in the world...Will you marry me?"
Ask her at Church or at a Family Function
Make a toast to her for raising her children right. Then tell the room that you would like nothing more to be her husband so you can stand by her side from now on and be the support that she deserves.
Send Her to the Spa
Every mom needs to be pampered once in awhile. After brunch and other familial obligations, send her to the spa for a day of beauty. Get the kids to help decorate the house while she is gone and be waiting when she pulls back up feeling refreshed and beautiful. Have a sign ready or a sky writer that proposes to her in your own words. It'll be a day that she never forgets.
Mother's day is the perfect day to ask a single mother to marry you, it is a day that is close to her heart anyways and your girlfriend will have even more reason to love it every year from now on.

Does a guy really want to propose to his girl on Mother's Day? There's something weirdly Oedipal about that. :) Either way, these are pretty great/romantic ideas.
