It is for that reason that many veteran players say that the best defense for void rays it to not let your opponent get a lot of them in SC 2.
That isn't always realistic but it is worth noting that scouting and being ready for your opponent is always the biggest key to winning in Starcraft 2, It is also a great idea to deny them the expansions they need to build mass void rays as well.
Beyond that, here are some more tips for stopping mass void rays in Starcraft 2:
Tip 1: Don't let them charge
Void rays show when they are charged, which happens when they've "warmed up" their main weapons. Many players will attack the destructible rocks on the map in order to charge them then attack. Try to avoid them while they're charged and try to attack them before they start warming up whether it's on a spot on the map or at your base.
This is where good scouting comes into play again.
Tip 2: Numbers game
If your opponent has mass void rays, you might want to check his base to see how much defense he has. Void rays can wreck your base in a hurry but if you have enough to stave them off for a bit you can counterattack and take out an opponent's expansion with ease while the rays are attacking you.
Then come back for them with the rest of your army.
Tip 3: Lure them in
Void rays fall quickly to massve groups of marines and/or hydralisks and similar anti-air ground units.
But you have to lure them farther into your base you can get a surround on them. Go all out to take them down; stim packs are a good investment for Terran and missile attack upgrades for hydras work well if you suspect void rays coming in.
Also, many air units do well against them such as mass mutalisks and vikings, the latter of which can "kite" the void rays with superior speed and range. Practice running and clicking "hold position" to hit the mass void rays in Starcraft 2 without being hit back.
For Protoss, psi storm works well but again you have to spring a trap on them to take them out and don't let them hover or a spot that is hard to reach from stalkers and high templar. You can also try hallucination with sentries to use on your own void rays to make it look like you have a similar amount and then send in the stalkers to fend them off.
Taking void rays on head-to-head when they are charged doesn't work in most cases, but if you're clever and take them out with good scouting and micromanagement, you can put a serious dent in an expensive army and then take the offensive.
Again, the best tip for stopping mass void rays in Starcraft 2, regardless of race, is to scout and make sure you know what's coming to strike back when the opponent launches his inevitable attack on your base.
