'Tis the Season for Apples

Apples, for me, signify the coming of fall. The crispness in the air can be tasted in a good, ripe apple picked right off of the tree. And it doesn't hurt that eating an apple a day....Well, you know the rest. Each of these recipes is as healthy as they come and eating the fruit in its natural state is the best way to receive all of its wonderful nutrients. I hope these recipes are just what you are looking for.

Cinnamon Apple Muffins

1 ½ c all purpose flour

1 ½ tsp baking powder

¼ tsp baking soda

1/8 tsp salt

2 eggs

1 c shredded apple

¾ c white sugar

3 Tbs vegetable oil

½ tsp cinnamon

1 tsp vanilla

Preheat oven to 350 degrees. Oil muffin pan or line with muffin cups. In a large bowl, stir together flour, sugar, baking powder, baking soda, cinnamon, and salt. Add the eggs, apples, oil, and vanilla. Stir just until it combines and there are no dry spots. Fill muffin pan 2/3 full. Bake for about 25 minutes, or until the tops are browned. Brush the tops with butter. Serve.

No Bake Candied Apples

3-4 of your favorite apples

1 pkg cherry jello mix

Peel, core, and section your apples and quickly mix the jello mix with the apples. The apples will turn brown if left out in the open too long, so work quickly.

High Protein Apple Snack

1 apple of your choice

½ c peanut butter

Core the apple and cut into sections. Smooth the peanut butter onto each section of apple.

You can get an apple corer/slicer at your local Walmart or Target in their kitchen section. This makes coring and slicing the apple so easy.
