Ireland
A great place to spend an outdoor vacation is Ireland. In Western Ireland, there are great hikes, that are very easy, with wonderful views. The food is great, the music is wonderful, the people are so welcoming, and for the most part, they all speak English. The most expensive part of your trip would be your airfare, because lodging and food costs are very inexpensive. I've loved every single trip to Ireland, it never gets old! Costa Rica
Costa Rica is hard to beat for an outdoor vacation. In Costa Rica, there are rain forests, natural beaches, and volcano National Parks for the entire family to explore. By traveling to Costa Rica, you will have an amazing ecology expedition in which you will spot a variety of rare animals and plants. It's a trip you will never forget, whether you want to spend your time relaxing on the beautiful beaches or cruising on a safari tour. Rocky Mountain National Park
If you want a hard core, outdoor survival vacation try Rocky Mountain National Park in Colorado, it's gorgeous and huge. It's one of my favorite places in the world. You can literally drink the water straight out of the the rivers. There are places you can lodge, whose rescue squads will come out and look for you if you fail to come back from your excursion at the planned time. The great thing about national parks is that they are in almost every state, so if you don't want to come out to Colorado you could probably find one relatively close to you.
